Chicken and RIce Casserole from Whitney

Sweet, sweet Wednesday you have finally arrived! As you're reading this, I'm more than likely in a car with the Crowson's headed to Gulf Shores! We took off bright and early so we should arrive at the beach mid-late afternoon depending on the drive. Try not to miss me too much :) While I'm out I've got some fantastic guest bloggers for you to meet! First up, Whitney - one of my H-town Blogger Hotties :)

Hey everyone! I'm so excited to be guest posting today. In case we haven't met before... hi, I'm Whitney and I blog over at The Observant Turtle. I just moved to Houston in January and I'm having a great time getting to know other H-town bloggers like Amy!

When I think of Amy, she's basically the epitome of health to me. (Or maybe I'm just super out of shape... that's another story for another day.) While this might not be the healthiest of recipes, it sure is yummy!

Chicken and Rice Casserole
Adapted from the Reservation4Two recipe

Chicken Rice Casserole
Ingredients
1/4 medium onion, diced and sauteed
2 boneless skinless chicken breasts, diced and cooked

1-2 cups fresh asparagus, cut into 1-inch pieces
1 (10-ounce) can condensed cream of celery soup
1/2 cup skim milk
1 box (about 6-ounces) long-grain and wild rice, cooked according to package directions
1/2 cup shredded cheddar cheese (I may have used more...)
salt and pepper



1. Preheat the oven to 350 degrees.

2. In a medium mixing bowl, combine ingredients; mix well.

3. Pour into a greased baking dish.

4. Bake uncovered for 35 minutes or until bubbly and green beans are tender.
5. Enjoy!

Ummm...hello delish! Thanks so much for sharing with us Whitney! The hubs loves Chicken and Rice Casserole so I'll probably be trying this recipe next time I make it for him! {P.S. lovin' your little helpers!} Hope y'all are having a wonderful Wednesday.
