On Saturday night, JP and I made pesto burgers! His was a turkey burger and mine was this amazing portabello burger that I saw on...Pinterest!
|Amy's pesto portabella version...not quite as pretty, but I'll blame that on my poor iPhone photography skills.|
3 handfuls for washed and dried basil leaves
2/3 cup extra-virgin olive oil
1/2 cup pine nuts
1/2 cup fresh grated Parmesan cheese
Juice of 1 small lemon
4 pinches of salt
Place all ingredients with half of the olive oil into a blender or food processor and blend. Gradually add the remaining olive oil until the pesto is thick and smooth!
Pumpkin Cream Cheese
Monday was a very slow day. Around 3pm, I decided that JP and I needed to go to the gym and then the grocery store on this rainy day. Once we got home, I got to work in the kitchen. First things first, pumpkin cream cheese. Can you say yummm? I don't know if I've told y'all this, but I love all things pumpkin. I would marry the pumpkin flavor if I could. Yes, I am six years old. Pumpkin is not only the most delicious flavor imaginable, it is also the epitome of fall! Fall = September = My Birthday = Best Season Ever. Duh. Enough of my rambling, back to pumpkin cream cheese.
Quick How To
Mix 8 oz cream cheese, 1/2 cup of pumpkin puree, 1 1/2 tsp of pumpkin pie spice, 1 tsp vanilla, 1 tsp Splenda brown sugar blend and a dash of salt in a bowl. Stir until completely combined. Spread on a piece of toast or a bagel, or use as a dip for apples or graham crackers! Store in the fridge and eat until completely devoured.
Pesto Dinner Rolls
After I made the cream cheese, I got to work on some delicious pesto rolls that JP and I were going to have as a side with dinner! I'm not going to lie though, I cheated a little. I made the rolls using heart healthy Bisquick! It worked and they tasted delish!
|Combine desired amount of Bisquick and milk as stated on the box :) Then attempt to roll out flat on wax paper.|
|Spread pesto over dough. Then roll dough into a log and slice into desired size rolls.|
|Here is my finished product! Not nearly as pretty as the original of Pinterest. I'll definitely attempt again and try to learn from my mistakes!|
|I could never forget to mention Mommy's little helper! She does a great job of making sure that the floors are squeaky clean at all times. Nothing gets past this nose or mouth!|
