Sometimes it's just the little things that someone special does that makes you love them even more. I love all of the little things JP does for me whether it's him cleaning some part of the house without me asking or rubbing my legs because he knows they're worn out from running. When I came back from my weekend trip to Houston, I found these waiting for me on my kitchen counter.
He is such a thoughtful and loving husband. Sometimes I wonder how I convinced him to date me :) I have been talking about how much I love yellow and purple lately (don't worry, pink still is and will ALWAYS be my favorite color). He must have been listening since he bought these for me! They really liven up the kitchen and make me smile and think of JP throughout the day.
This month also is JP's birthmonth. Yes, I said birthmonth. I believe in month long celebrations of birthdays. I love birthdays and think that is each person's time to feel special. This being said I love ALL birthdays, not just my own. Many of my friends and attest to this statement. In honor of JP's birthmonth, I decided to bake him cupcakes on Friday!
Meet one of the yummiest concoctions that I have ever created on a whim in the kitchen. Absolutely delish! Want the recipe? Okay I'll give it to you...
Peanut Butter Cup Cupcakes
1 1/2 cup whole wheat all purpose flour (you can use regular too...I just don't have any)
1/2 cup of butter
1 cup of Sugar Splenda mixture
1/2 cup of milk
1 teaspoon of baking powder
1 teaspoon of vanilla
Reese's Peanut Butter cups (I used some of the egg shaped ones from Easter!)
Preheat oven to 350.
Cream butter, sugar, and eggs together until fluffy. Add vanilla.
Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Crush the Oreos and add them into the batter.
Pour into cupcake tins and bake for 20-25 mins at 350. Let cool, then frost.

Needless to say, JP loved the cupcakes and it was the perfect little surprise to come home to after a long Friday at work.
As for the rest of the weekend, JP and I went birthday shopping for him at the outlet mall in Washington, PA and then worked in the yard pulling weeds on Saturday. Sunday we went to church and then headed out to the ball park to watch the Astros play the Pirates! We got the tieckets for free from a vendor at JP's work which made going even better. That night I cooked up a nice Texas meal of 7 layer bean dip and enchilada casserole for dinner since my friend Maria came over! Here are some pictures from the ball game!

All in all, May has started out pretty wonderful and I am so thankful for the little things that JP and I can do for each other in life. It's what makes each day special and helps us to appreciate each other even more. I hope that everyone is having a very happy Monday! Until next time...
